Nutrition is a significant concern for seniors, often because of their dentures. Poorly fitting dentures can make it hard to eat many foods, including raw vegetables, so dentures can lead to poor nutrition. But not all vegetables are best eaten raw, so it’s important to know how to prepare your vegetables for maximum nutritional value.
There are many vegetables that are best eaten raw. Broccoli, for example, contains an enzyme called myrosinase that can cleanse toxins from the liver and your digestive system, but it’s destroyed by cooking. As is glucosinate, another cancer-fighting nutrient in broccoli. Cucumbers have three different types of phytonutrients that can protect against cancer, arthritis, and other effects of oxidation, but they’re destroyed by cooking. Lettuce’s nutrients, too, are lost in cooking, as are the anti-cancer effects of garlic.
Red peppers and other vitamin C-containing vegetables are also best to eat raw. Vitamin C is a nutrient vulnerable to heating.
On the other hand, some nutrients increase in food when it’s cooked. Tomatoes, for example, have more lycopene when they’re cooked than when they’re raw. Winter squash is best eaten cooked, when it’s easier to absorb the vitamin A. Mushrooms should be lightly cooked to bring out their flavor and their nutrients.
Despite the fact that some nutrients are more plentiful in cooked or raw vegetables, health experts recommend that you prepare vegetables the way that you are most likely to eat more of them.So you should be able to get a healthy diet even with poorly fitting dentures if you cook all vegetabls to a soft consistency.
But do you really want to live like that? Wouldn’t it be better to have the freedom to eat vegetables the way you want: raw, steamed, or boiled–not the only way you can eat them? If you dont’ want to live life limited by dentures, we can help you get better-fitting dentures that lead to more freedom to eat and do what you want.
